For stripes instead of swirls, pick up at step 4 (skip 5), cut the 3-layer dough in half lengthwise, brush one half’s top with egg white and press the other half on top. Wrap and chill the bar until firm, then slice into 1⁄4-in. (5 mm) thick pieces and bake.
