This is very tasty and I believe the topping could easily be used on fish, as well. I will definitely make this again. I pounded my chicken breasts to about 1/2" thickness so they were uniform in size and the topping stayed on it well.

1/2 cup	panko breadcrumbs	125 mL
1/3 cup	Compliments Medium Chunky Salsa	75 mL
1/4 cup	finely grated Asiago or Parmesan cheese	60 mL
3 tbsp	finely chopped fresh Compliments Chives	45 mL
2 tbsp	finely chopped fresh parsley	30 mL
1 tbsp	olive oil	15 mL
1/4 tsp	pepper	1 mL
4	boneless skinless chicken breasts

1.	Preheat oven to 375oF (190 C). In a bowl, mix together breadcrumbs, salsa, cheese, herbs, oil and pepper.
2.	Lightly pat breadcrumb mixture onto chicken and bake on a parchment paper-lined baking sheet until chicken is cooked through, about 20 to 25 min.
